The Farm - We are a family owned and operated Grade A dairy farm on Whidbey Island. Located on the lovely eastern coastline of the island, the farm has been in the Swanson family for three generations. With forest, pasture, ponds, and meadows, the farm provides a diversity of high quality habitat for livestock and wildlife. The family's goals are to "nurture the land, our family, and our livestock through the use of creative, sustainable farming, and the production of high quality, handcrafted sheep milk cheeses and farm raised lamb."
Our Cheese - Island Brebis is a whole raw sheep's milk tomme that is aged 3 - 6 months. The rustic wheels, weighing 5 - 6 pounds, are washed, brushed, and turned to develop a natural golden brown rind. It has a smooth, creamy paste that is aromatic and dense. The flavor is pleasingly complex with rich layers of sweet, nutty and herbaceous tones. Ingredients: Whole raw sheep's milk, cultures, salt, natural rennet.
Our Lamb - Our lambs are born between February and April each year and are raised on their mother's milk for the first weeks of their lives. Once they are weaned, they are pasture raised and have a very good life with the best care and attention. When they reach market weight, they are humanely harvested and sold locally. We sell whole lambs directly to our customers beginning in July.
Fern Ridge Alpacas will have samples of their fiber products on hand for the weekend. Skyroot Farm is planning on bringing their produce.
